¼ cup water
1 cup nonfat cottage cheese
2 tablespoons canola oil
1 large egg
1 tablespoon granulated sugar
¼ teaspoon baking soda
Pinch nutmeg
⅛ teaspoon dried lemon granules, crushed
¼ teaspoon salt
3 cups bread flour
2½ teaspoons active dry yeast
Add the ingredients to your bread machine in the order recommended by the manufacturer (which is usually in the order given here), being careful that the yeast doesn't come in contact with the salt.
Check the bread machine at the “beep” to make sure the dough is pulling away from the sides of the pan and forming a ball. Add water or flour, if needed. (You do not want the dough to be overly dry.)
Bake at the white bread setting, light crust.
