Pineapple Pear Mold

A molded salad is a refreshing old-fashioned recipe. This one is full of vitamin C and would be delicious for breakfast on a hot day.

2 (0.25-ounce) envelopes unflavored gelatin

⅓ cup sugar

1 cup orange juice, divided

1 (20-ounce) can crushed pineapple

2 (6-ounce) cans pineapple-orange juice

2 pears, peeled and diced

  • In a small saucepan, soften the gelatin in ½ cup orange juice for 5 minutes. Add sugar, then place over low heat and stir until the gelatin and sugar dissolve. Drain, pineapple, reserving juice.

  • In a 4-cup glass measuring cup, combine remaining orange juice, pine-apple-orange juice, and enough reserved pineapple liquid to equal 2½ cups. Stir into gelatin mixture with drained crushed pineapple. Cover and chill until partially set, about 30 minutes.

  • Fold the pears into the pineapple mixture and transfer to a 6-cup mold. Cover and chill until firm, about 2 to 3 hours. To unmold, dip the bottom of the mold in hot water for 10 seconds, then invert onto a plate.
