This exotic salad is a great choice for a cookout. It's tender, crisp, and sweet, with gorgeous color and texture.

4 hearts of palm, quartered
4 Belgian endives, sliced
2 bunches watercress, chopped
4 tomatoes, sliced
2 tablespoons lemon juice
2 teaspoons curry powder
1 tablespoon red wine vinegar
1 tablespoon mustard
¼ teaspoon salt
⅛ teaspoon white pepper
1 tablespoon extra-virgin olive oil
½ cup mango chutney
1 tablespoon minced chives
On a large chilled serving platter, arrange hearts of palm, endive, water-cress, and tomatoes in layers.
In a small bowl, combine remaining ingredients except chives and whisk to combine. Drizzle over the salad, sprinkle with chives, and serve immediately.
Hearts of Palm
Hearts of palm are literally the center of the palmetto tree, the state tree of both Florida and South Carolina. It's also known as swamp cabbage. It's almost always sold canned. The hearts are tender and juicy, with almost no fat and no cholesterol. You can use them in any salad to add crunch and flavor.
