Glorified Brown Rice by Linda Larsen
Glorified Rice is usually a very sweet salad, more like a dessert. This healthier version is tangy and just slightly sweet.

1 (16-ounce) can fruit cocktail
3 cups cooked brown rice
1 cup sliced celery
½ cup sliced green onions
2 tablespoons red wine vinegar
1 tablespoon extra-virgin olive oil
2 tablespoons Dijon mustard
½ cup plain low-fat yogurt
½ teaspoon dried tarragon leaves
⅛ teaspoon white pepper
Drain fruit cocktail, reserving ¼ cup of the liquid. In a large bowl, toss together fruit, brown rice, celery, and green onions.
In a small bowl, combine reserved liquid from fruit cocktail, vinegar, olive oil, mustard, yogurt, tarragon, and pepper and mix with wire whisk until blended. Pour over rice mixture and stir to coat.
Cover salad and chill for 1 to 2 hours before serving.
Fruit Cocktail
There are lots of varieties of fruit cocktail on the market. You can find it canned or bottled in the refrigerated section of the produce aisle in most supermarkets. The combination usually includes cherries, grapes, diced pears, pineapple, and diced peaches. It's packed in water or a light or heavy syrup.
