Gazpacho Salad

Gazpacho is a Spanish soup. It's served cold and is made of tomato juice and fresh vegetables.

2 cucumbers, peeled and sliced

3 tomatoes, chopped

1 green bell pepper, chopped

1 red sweet onion, chopped

1 cup low-sodium tomato juice, divided

¼ cup red wine vinegar

1 tablespoon olive oil

½ teaspoon Tabasco sauce

¼ teaspoon salt

¼ teaspoon white pepper

2 cloves of garlic, minced

  • Place ¼ cup each of the cucumber, tomato, bell pepper, onion, and the tomato juice in a food processor; process until blended.

  • In a large bowl, combine blended mixture with remaining cucumber, tomato, bell pepper, and onion. Stir in remaining tomato juice along with the vinegar, oil, Tabasco, salt, pepper, and garlic. Cover and chill for at least 2 hours before serving.
