Place ¼ cup each of the cucumber, tomato, bell pepper, onion, and the tomato juice in a food processor; process until blended.
In a large bowl, combine blended mixture with remaining cucumber, tomato, bell pepper, and onion. Stir in remaining tomato juice along with the vinegar, oil, Tabasco, salt, pepper, and garlic. Cover and chill for at least 2 hours before serving.
