Sweet Potato Apple Purée

Now this is a dish for the holidays! You can keep it warm in a slow cooker if you'd like; stir occasionally.

INGREDIENTS | SERVES 12

  • 3 pounds sweet potatoes, peeled and cubed
  • 2 Granny Smith apples, peeled and cubed
  • ½ cup apple juice
  • 2 tablespoons butter
  • ½ teaspoon ground nutmeg
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • ¼ cup toasted sunflower seeds
  1. In a large saucepan, place potatoes and cover with water. Cover saucepan, bring to a boil, reduce the heat to medium-low, and cook until tender, about 15 minutes. Drain.

  2. Meanwhile, in a small saucepan, combine the apples with apple juice. Bring to a simmer over medium heat and cook until tender, about 5 minutes.

  3. Transfer potatoes and undrained apples to a food processor. Add butter, nutmeg, salt, and pepper and purée until smooth.

  4. Sprinkle with sunflower seeds and serve.
