Sweet Potato Apple Purée
Now this is a dish for the holidays! You can keep it warm in a slow cooker if you'd like; stir occasionally.
INGREDIENTS | SERVES 12
- 3 pounds sweet potatoes, peeled and cubed
- 2 Granny Smith apples, peeled and cubed
- ½ cup apple juice
- 2 tablespoons butter
- ½ teaspoon ground nutmeg
- 1 teaspoon salt
- ¼ teaspoon white pepper
- ¼ cup toasted sunflower seeds
In a large saucepan, place potatoes and cover with water. Cover saucepan, bring to a boil, reduce the heat to medium-low, and cook until tender, about 15 minutes. Drain.
Meanwhile, in a small saucepan, combine the apples with apple juice. Bring to a simmer over medium heat and cook until tender, about 5 minutes.
Transfer potatoes and undrained apples to a food processor. Add butter, nutmeg, salt, and pepper and purée until smooth.
Sprinkle with sunflower seeds and serve.
