Microwave Sole Florentine

1 pound sole fillets

¼ teaspoon salt

⅛ teaspoon white pepper

1 tablespoon lemon juice

1 tablespoon olive oil

2 cups coarsely chopped baby spinach

¼ teaspoon nutmeg

  • In microwave-safe glass baking dish, arrange the fillets. Sprinkle with salt, pepper, lemon juice, and olive oil. Cover with microwave-safe plastic wrap and vent 1 corner.

  • Microwave on high, rotating dish once during cooking time, for 4 minutes. Remove plastic wrap and arrange spinach leaves on top; sprinkle with nutmeg.

  • Return to microwave oven and microwave on high for 1 to 2 minutes longer, or until fish flakes easily when tested with fork and spinach wilts slightly. Let stand on solid surface for 3 minutes before serving.

Cooking in the Microwave
