Crab Surprise

Ketchup is a low-fat product that adds lots of flavor to this takeoff on Crab Louis. Surprisingly, it contains a lot of vitamin A!

2 tablespoons olive oil

¼ cup minced onion

3 tablespoons flour

⅔ cup low-sodium, fat-free chicken broth

⅔ cup skim milk

¼ cup ketchup

1 teaspoon Worcestershire sauce

1 teaspoon paprika

⅛ teaspoon Tabasco sauce

2 tablespoons lemon juice

1 pound lump crabmeat

2 cups hot cooked brown basmati rice

  • In a large saucepan, heat oil over medium-low heat. Add onion; cook and stir until crisp-tender, about 4 minutes. Add the flour and cook, stirring constantly, for 2 minutes until mixture bubbles. Whisk in the broth and milk and simmer until slightly thickened, stirring frequently, about 8 minutes.

  • Add ketchup, Worcestershire sauce, paprika, Tabasco sauce, and lemon juice and cook 2 minutes longer. Add crabmeat and simmer just until crab is hot, about 8 to 10 minutes longer.

  • Spoon rice onto serving plate, top with crab mixture, and serve immediately.
