Basic Low-Fat White Sauce

Toasting the flour and cornstarch before adding the milk enhances the flavor and keeps the sauce from tasting floury.

2 tablespoons flour

1 tablespoon cornstarch

½ teaspoon lemon pepper

⅛ teaspoon salt

1 cup 1% milk

  • Combine flour and cornstarch in small saucepan. Place over medium-low heat; cook and stir until toasted but not browned, stirring constantly. Add lemon pepper, salt, and milk, stirring constantly.

  • Continue to cook and stir over medium-low heat until sauce is thickened, about 10 minutes. Use immediately as base for cheese sauce or gravy, or cover and store in refrigerator up to 3 days.
