Pork Corn Dogs

These taste just like corn dogs from the state fair, but they're better for you! Your kids will love them.

1 cup flour

2 tablespoons sugar

1½ teaspoons baking powder

¼ teaspoon salt

⅔ cup cornmeal

3 tablespoons vegetable oil

1 egg

¾ cup skim milk

1 pound lower-fat frankfurters

  • Preheat oven to 350°F. Spray a cookie sheet with nonstick cooking spray and set aside. In a medium bowl, sift together the flour, sugar, baking powder, and salt. Stir in the cornmeal.

  • Using a pastry blender or two knives, cut in the oil until the mixture resembles coarse meal. In a separate bowl, whisk together the egg and milk until blended and stir into the cornmeal mixture, mixing until blended.

  • Insert a wooden skewer into the end of each hot dog. Working in batches, coat the hot dogs evenly with the batter and arrange on prepared cookie sheet.

  • Bake for 15 to 25 minutes or until batter is lightly browned. Serve immediately with ketchup and mustard.
