Waldorf Pasta Salad by Linda Larsen
Waldorf salads are usually made with just apples, mayonnaise, and walnuts; this twist is delicious and easy to make.

2 Granny Smith apples, chopped
1 cup red grapes
1 cup green grapes
2 oranges, peeled and sliced
1 (8-ounce) package rotini pasta, cooked and drained
1 cup plain low-fat yogurt
½ teaspoon dried thyme leaves
1 tablespoon honey
⅓ cup chopped walnuts, toasted
6 large lettuce leaves
In a serving bowl, combine apples, red grapes, green grapes, and oranges and toss to coat.
In a small bowl, combine yogurt, thyme, and honey and mix well. Pour over salad and add cooked pasta and walnuts; toss to coat. Serve on lettuce leaves.
Grapes
Grapes contain flavonoids, which is what gives them their beautiful color. The redder the grape, the higher the concentration of this compound. These chemicals, also found in red wine, help protect against LDL cholesterol and can help reduce blood clot formation. They also contain resveratrol, which helps maintain heart health.
