Snow Pea Penne Salad

Snow peas and penne are about the same size, so this salad looks pretty and tastes great.

1 pound snow peas

1 small red onion, chopped

¼ cup chopped mint leaves

2 cups uncooked penne pasta

2 tablespoons raspberry vinegar

1 tablespoon olive oil

¼ teaspoon salt

⅛ teaspoon pepper

1 tablespoon honey

  • Bring a large pot of water to a boil. Meanwhile, in a steamer, steam the snow peas for 3 to 5 minutes until crisp-tender. Rinse under cold water, drain, and combine with red onion and mint in serving bowl; set aside.

  • Cook pasta according to package direction until al dente. In a small bowl, combine vinegar, oil, salt, pepper, and honey and whisk to blend. Pour over snow pea mixture and toss to coat.

  • When pasta is cooked, drain and immediately add to snow pea mixture. Stir gently to coat. Cover and chill for 2 to 3 hours before serving.
