Snow Pea Penne Salad

Bring a large pot of water to a boil. Meanwhile, in a steamer, steam the snow peas for 3 to 5 minutes until crisp-tender. Rinse under cold water, drain, and combine with red onion and mint in serving bowl; set aside.
Cook pasta according to package direction until al dente. In a small bowl, combine vinegar, oil, salt, pepper, and honey and whisk to blend. Pour over snow pea mixture and toss to coat.
When pasta is cooked, drain and immediately add to snow pea mixture. Stir gently to coat. Cover and chill for 2 to 3 hours before serving.
