Uncooked Applesauce by Linda Larsen
In just a few minutes, you can have a fresh applesauce that tastes like it took hours to make.
Yields 1½ cups; serving size ¼ cup

4 apples
⅓ cup apple juice
Pinch salt
½ teaspoon cinnamon
1 tablespoon lemon juice
Peel apples, core, and dice. Combine in food processor or blender with remaining ingredients. Blend or process until desired consistency. Cover and chill for 2 to 3 hours before serving.
Store covered in refrigerator for up to 4 days.
Apple Choices
Because this sauce is uncooked, you can use any apple that is good for eating out of hand. Choose a tart or sweet variety depending on whether you want your applesauce to be tart or sweet. Good snacking varieties include Red Delicious, Honeycrisp, Ambrosia, Braeburn, Empire, Gala, and Fuji.
