Nectarine Chutney

Chutney makes a perfect low-fat — almost nonfat — sandwich spread. It pairs well with ham, chicken, and roast beef.

Yields 2 cups; serving size 2 tablespoons

3 nectarines

1 onion, chopped

½ cup brown sugar

½ cup golden raisins

¼ cup apple cider vinegar

1 teaspoon chili powder

¼ teaspoon allspice

½ cup slivered almonds, toasted

  • Peel nectarines, remove pit, and chop. In 2-quart microwave-safe bowl, combine all ingredients except almonds.

  • Microwave on high for 20 to 25 minutes, stirring every 5 minutes, until mixture is very thick. Fruit should be tender.

  • Let mixture cool; cover, and refrigerate until cold. Stir in the almonds before serving. Chutney can be stored, covered, in refrigerator up to 2 weeks.
