Texan Rice by Linda Larsen
This simple one-dish meal is a good choice for a busy weeknight dinner.

½ pound lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 jalapeño pepper, minced
3 cups hot cooked brown rice
2 cups frozen corn, thawed
½ cup barbecue sauce
¼ cup ketchup
¼ teaspoon salt
⅛ teaspoon cayenne pepper
In a large nonstick skillet, cook the beef over medium heat until browned, about 5 minutes. Drain off any fat. Add the onion, garlic, and jalapeño pepper and continue to cook until vegetables are tender, about 7 minutes longer. Drain again.
Add the rice, corn, barbecue sauce, ketchup, salt, and pepper and mix well. Cook over low heat, stirring frequently, until food is hot. Serve immediately.
Ground Beef
You can find several types of ground beef in the grocery store. The leanest is 95% ground beef, which means it contains 5% fat. If you're making a recipe that doesn't drain the beef after cooking, like meat loaf, the leanest beef is a good choice. Other percentages of lean to fat include 90%, 85%, and 75%.
