Lean, Juicy Burgers

Mixing these burgers like meat loaf keeps the meat tender and moist. Serve these at your next cookout.

1 tablespoon canola oil

½ cup minced onion

½ cup minced celery

3 tablespoons dried bread crumbs

1 tablespoon Worcestershire sauce

¼ teaspoon salt

⅓ teaspoon pepper

1 pound 95% lean top round

6 hamburger buns

⅓ cup nonfat mayonnaise

3 tablespoons ketchup

6 tomato slices

6 red onion slices

  • Prepare and preheat grill or broiler. In a medium saucepan, combine the oil, onion, and celery; cook over medium heat for 5 minutes until tender. Add to bowl; add bread crumbs, Worcestershire sauce, and salt and pepper.

  • Add beef; gently mix to combine. Shape into six patties. Place the patties on a grill rack or broiler pan. Grill or broil, turn once, until well done 160°F, 7 to 8 minutes on each side.

  • When the burgers are almost ready, toast the buns on the grill or under the broiler until golden brown. Combine mayonnaise and ketchup and spread on the buns. Top with burgers, tomato and onion slices, and then the tops of the buns. Serve at once.

Grilling Hamburgers

Juicy hamburgers are easy to make — as long as you follow a few rules. First, handle the meat as little as possible. Keep it cold, and form it gently into patties. When you're cooking the burgers, do not press down on them with a spatula; that just squeezes out the juice you've worked so hard to keep in the burger!
