Margarita Pie

Lots of lime, in the forms of juice and zest, make this pie tart and refreshing. Serve strawberries as a sweet-tasting complement.

SERVES 8

INGREDIENTS

  • 1 package unflavored gelatin
  • ⅔ cup sugar
  • ¼ teaspoon salt
  • ½ cup egg substitute
  • ½ cup fresh lime juice
  • 1 teaspoon grated lime zest
  • ¼ cup tequila or apple cider
  • 1½ cups nonfat whipped topping
  • 1 (9-inch) Graham Cracker Crust
  • 8 very thin lime slices
  1. In a small saucepan, combine gelatin, sugar, and salt and mix well. Add egg substitute, lime juice, and lime zest and mix well with wire whisk. Let stand for 5 minutes.

  2. Cook mixture over medium heat, stirring frequently, until gelatin and sugar dissolve, about 5 to 6 minutes. Remove from heat and let cool for 30 minutes.

  3. Stir in tequila and chill in refrigerator until mixture thickens. Fold whipped topping into tequila mixture, then spoon into crust. Chill until firm, about 4 to 6 hours. Garnish with lime slices just before serving.
