Turkey-Tomato Hoagie Sandwiches
These sandwiches taste like they came from a gourmet deli, but you control the nutrition!
INGREDIENTS
- 4 Whole-Grain Hoagie Buns
- 3 tablespoons plain yogurt
- 1 tablespoon olive oil
- 2 tablespoons Dijon mustard
- 1 teaspoon minced garlic
- 2 cups shredded lettuce
- 8 ounces sliced cooked deli turkey
- 2 tomatoes, sliced
- 4 (1-ounce) slices extra-sharp Cheddar cheese
Cut hoagie buns in half lengthwise. Toast in a toaster oven until very light golden brown. Meanwhile, in small bowl combine yogurt, olive oil, mustard, and garlic and mix well.
Spread yogurt mixture on cut sides of toasted buns.
Top with half of the lettuce, slices of the turkey, sliced tomatoes, Cheddar, and the rest of the lettuce. Put the buns together to form sandwiches, then cut in half crosswise and serve.

Waldorf Salad
The Waldorf Salad is named for the Waldorf-Astoria Hotel in New York City. This delicious salad, full of fruit and nuts, was created by the maitre d', not the chef. Originally, the recipe called for just celery, apples, and mayonnaise. Most versions now use walnuts as well as raisins. Try the salad with pears and dried cranberries!
