Mexican Chicken Fingers
These excellent little chicken fingers are delicious dipped into the creamy salsa combination.
INGREDIENTS
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ⅛ teaspoon pepper
- ⅛ teaspoon cayenne pepper
- 3 tablespoons yellow cornmeal
- ¼ cup orange juice
- 1 pound chicken tenders
- 3 tablespoons olive oil
- ½ cup Super Spicy Salsa
- ⅓ cup low-fat sour cream
In shallow bowl, combine chili powder, cumin, garlic powder, pepper, cayenne pepper, and cornmeal and mix well. Place orange juice in shallow bowl.
Cut chicken fingers in half crosswise. Add to orange juice and let stand for 10 minutes. Remove chicken from orange juice and toss in spice mixture.
In large saucepan, heat olive oil over medium heat. Add chicken; cook until browned, about 2–3 minutes. Carefully turn and cook on second side until browned, about 3–5 minutes, and chicken is thoroughly cooked.
In small bowl, combine salsa and sour cream and mix well. Serve with chicken fingers.
