Bruschetta with Roasted Garlic

You can toast the bread or leave it plain in this easy recipe. Toasted bread has more crunch, but the plain bread will soak up more of the olive oil mixture.

INGREDIENTS

  • 2 heads Roasted Garlic
  • ¼ cup olive oil
  • 1 teaspoon dried basil leaves
  • ½ teaspoon dried oregano leaves
  • ⅛ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • 12 slices Hearty-Grain French Bread
  1. Remove the cloves from the garlic heads and finely chop.

  2. In small saucepan, combine garlic, olive oil, basil, oregano, salt, and red pepper flakes. Heat over low heat just until warm, about 2–4 minutes.

  3. Arrange bread on serving plate. Pour garlic mixture into a small bowl and serve with the bread. Let diners spoon the garlic mixture onto the bread.

Roasted Garlic

If you think you don't like garlic, try roasted garlic! The heat of the oven turns this root vegetable into a totally new dish. When roasted, the garlic becomes very soft and turns brown. Its sharp flavors are eliminated and the roasted cloves taste nutty, and sweet, with a slight toasted flavor. Use them in everything from soups to appetizer spreads.
