Wheat-Berry Salad

Wheat berries are actually the whole grain. You can find them in the bulk section of health-food stores and co-ops.

INGREDIENTS

  • 1 cup wheat berries
  • 3 cups water
  • 2 cups broccoli florets
  • ¼ cup olive oil
  • 3 tablespoons mustard
  • ½ cup plain yogurt
  • 2 tablespoons lemon juice
  • ⅛ teaspoon pepper
  • ½ cup dried cranberries
  • 4 green onions, chopped
  1. Rinse the wheat berries and drain. Combine in large saucepan with water over high heat. Bring to a boil, then cover, reduce heat to low, and simmer for about 55–65 minutes or until berries are tender.

  2. Add broccoli florets to pan, cover, and simmer for another 5 minutes to steam the broccoli. Drain well if necessary.

  3. In large bowl, combine olive oil, mustard, yogurt, lemon juice, and pepper and mix well.

  4. Add wheat berries, broccoli, cranberries, and green onions and mix gently.

  5. Cover and refrigerate for 3–4 hours before serving.
