Buttermilk Dressing
Buttermilk is naturally thick and tastes rich, even though it's low in fat. This classic dressing is perfect drizzled over mixed greens.
INGREDIENTS
- ¼ cup buttermilk
- 2 tablespoons low-fat mayonnaise
- 2 tablespoons lemon juice
- 2 shallots, chopped
- ¼ teaspoon salt
- 1 tablespoon chopped chives
- 1 tablespoon chopped fresh dill
- ⅛ teaspoon pepper
Combine all ingredients in blender or food processor and blend or process until mixed. Cover and store in refrigerator for up to 4 days.
Yields 1 cup; serving size 2 tablespoons
