Western Omelet
This classic omelet can be made with a jalapeño or habanero pepper thrown in if you like it really spicy.
INGREDIENTS
- 1 tablespoon olive oil
- ½ cup chopped onion
- 3 cloves garlic, minced
- ½ cup chopped green bell pepper
- ½ cup chopped red bell pepper
- 3 ounces chopped ham
- 1 egg
- 8 egg whites
- ¼ teaspoon cayenne pepper
- 1 teaspoon chili powder
- ¼ cup skim milk
- ⅛ teaspoon pepper
In large nonstick skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers; cook and stir until crisp-tender, about 4 minutes.
Add ham; cook and stir until ham is hot.
In large bowl, combine egg, egg whites, cayenne pepper, chili powder, milk, and pepper and mix well. Pour into skillet with vegetables and ham.
Cook, running a spatula around the edges to let uncooked mixture flow underneath, until eggs are set and bottom is golden brown.
Fold omelet over on itself and slide onto plate, serve.
