Pork Scallops Françoise

This fresh and simple recipe takes just minutes to make. Use the best ingredients you can find for the perfect meal.


  • 3 tablespoons flour
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 egg white, slightly beaten
  • 4 (3-ounce) pork scallops
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley
  1. On plate, combine flour, salt, and pepper. Place egg white in shallow bowl.

  2. If necessary, pound scallops until they are ⅛" thick. Dip scallops into flour, then into egg whites.

  3. Heat olive oil and butter in nonstick skillet. Add garlic; cook for 1 minute. Then add coated pork; brown for 2–3 minutes per side.

  4. Add lemon juice; cook for 2–3 minutes or until pork is cooked and tender. Sprinkle with parsley and serve immediately.
