Chops with Mint and Garlic

This recipe tastes best cooked on the grill; the wood smoke adds another layer of flavor to this simple dish.

INGREDIENTS

  • 3 tablespoons minced fresh mint
  • 1 tablespoon minced garlic
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 (4-ounce) pork chops
  • ⅛ teaspoon salt
  • ⅛ teaspoon white pepper
  1. Prepare and preheat grill. In small bowl, combine mint, garlic, olive oil, and lemon juice and mix well.

  2. Sprinkle pork chops with salt and pepper. Brush with sauce and place on grill.

  3. Grill 6″ from medium coals for 5–6 minutes per side until internal temperatures reach 155ºF, brushing with mint sauce. Discard any remaining mint sauce.

  4. Let chops stand for 5 minutes, then serve.

Pork Chops: Boneless or Bone-In?

It's mostly personal choice and availability that dictates whether you buy boneless or bone-in pork chops. The boneless chops are generally a bit more expensive, while the bone provides more flavor. If you are going to pound pork chops to make them thinner, choose boneless chops for the best results.
