Northwest Salmon
Juniper berries add a nice bittersweet flavor to the sweet onions and blueberries in this gourmet sauce.
INGREDIENTS
- 4 tablespoons olive oil, divided
- 5 juniper berries, crushed
- ½ cup chopped red onion
- 1 cup blueberries
- ½ cup chopped hazelnuts
- ¼ cup dry white wine
- 4 (5-ounce) salmon fillets
- Pinch salt
- ⅛ teaspoon white pepper
- 2 cups watercress
Preheat grill or broiler.
In small saucepan, heat 3 tablespoons of the olive oil. Add juniper berries and red onion; cook and stir for 3 minutes. Add blueberries, hazelnuts, and wine and bring to a simmer.
Meanwhile, sprinkle salmon with salt and pepper and brush with olive oil. Broil or grill 6″ from heat until salmon flakes when tested with a fork.
Place salmon on watercress and pour blueberry sauce over all; serve immediately.
