Northwest Salmon

Juniper berries add a nice bittersweet flavor to the sweet onions and blueberries in this gourmet sauce.

INGREDIENTS

  • 4 tablespoons olive oil, divided
  • 5 juniper berries, crushed
  • ½ cup chopped red onion
  • 1 cup blueberries
  • ½ cup chopped hazelnuts
  • ¼ cup dry white wine
  • 4 (5-ounce) salmon fillets
  • Pinch salt
  • ⅛ teaspoon white pepper
  • 2 cups watercress
  1. Preheat grill or broiler.

  2. In small saucepan, heat 3 tablespoons of the olive oil. Add juniper berries and red onion; cook and stir for 3 minutes. Add blueberries, hazelnuts, and wine and bring to a simmer.

  3. Meanwhile, sprinkle salmon with salt and pepper and brush with olive oil. Broil or grill 6″ from heat until salmon flakes when tested with a fork.

  4. Place salmon on watercress and pour blueberry sauce over all; serve immediately.
