Baked Halibut in Mustard Sauce

Combining breadcrumbs with milk to form a sauce is a trick from Scandinavian cooks.

INGREDIENTS

  • 1 pound halibut fillet
  • Pinch of salt
  • ⅛ teaspoon white pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon orange zest
  • 2 tablespoons butter or margarine, melted
  • ¼ cup skim milk
  • 2 tablespoons Dijon mustard
  • 1 slice Honey-Wheat Sesame Bread, crumbled
  1. Preheat oven to 400ºF. Spray a 1-quart baking dish with nonstick cooking spray.

  2. Cut fish into serving-size pieces and sprinkle with salt, pepper, and lemon juice.

  3. In small bowl, combine melted butter, milk, and mustard, and whisk until blended.

  4. Stir in the breadcrumbs. Pour this sauce over the fish.

  5. Bake for 20–25 minutes, or until fish flakes when tested with fork and sauce is bubbling. Serve immediately.
