Grapefruit Pie
Grapefruit is an unusual fruit to use in a pie, but it's delicious and has lots of fiber and vitamin C.
INGREDIENTS
- 1 Loco Pie Crust, baked
- 2 small red grapefruits
- 1 (8-ounce) package low-fat cream cheese, softened
- 1 (14-ounce) can low-fat sweetened condensed milk
- 3 tablespoons honey
Prepare crust according to directions and let cool completely.
Cut one grapefruit in half and squeeze juice from one half. Peel other half and chop fruit; set aside.
In medium bowl, beat cream cheese until smooth; gradually add condensed milk, beating until fluffy. Add grapefruit juice and mix well; pour into crust and refrigerate.
Peel second grapefruit and separate into sections; remove seeds.
Sprinkle chopped grapefruit over pie; arrange grapefruit sections on top. Drizzle with honey; cover and refrigerate for 4–6 hours before serving.
