Sugared Pork and Apple Skewers

Pork tenderloin is very lean yet quite tender. It's delicious paired with tart and sweet apples in this simple appetizer recipe.

INGREDIENTS

  • ⅓ cup brown sugar
  • 3 tablespoons apple cider
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 pound pork tenderloin
  • 2 Granny Smith apples
  1. For marinade, in medium bowl, combine sugar, cider, vinegar, and soy sauce and mix well. Cut pork into 1″ cubes and add to sugar mixture. Stir well, then cover and refrigerate for at least 4 hours.

  2. When ready to eat, prepare and preheat grill. Core apple and cut into ½″ slices.

  3. Using small metal skewers, alternately thread pork and apples. Brush with all remaining marinade.

  4. Place skewers on grill 6″ from medium coals.

  5. Grill for 6–10 minutes, turning once, until pork registers 155ºF on meat thermometer or is just slightly pink inside. Serve immediately.
