Fried Tomatoes with Goat Cheese

Make sure the tomatoes are really green, with no touch of red, for best results. Serve these hot with a knife and fork.

INGREDIENTS

  • 3 green tomatoes
  • 1 egg
  • ¼ cup buttermilk
  • ½ cup cornmeal
  • ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • ⅛ teaspoon cayenne pepper
  • ½ cup olive oil
  • ⅓ cup goat cheese
  1. Cut tomatoes into ⅓" slices; discard ends.

  2. In shallow bowl, combine egg and buttermilk and whisk to combine. On plate, combine cornmeal, flour, baking powder, and pepper and mix well.

  3. Place olive oil in large saucepan over medium heat. When hot, dip tomato slices into egg mixture, then into cornmeal mixture to coat. Place carefully in oil and fry, turning once, until golden brown, about 3–5 minutes per side.

  4. Drain fried tomatoes on paper towels and top each with a bit of goat cheese. Serve immediately.
