Black Bean Soup
Serve with baked tortilla chips for a delicious meal.
INGREDIENTS | YIELDS 4 servings
- 1 15-ounce can black beans, rinsed and drained
- 2 cups water
- 1 cup chopped tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon sugar
- ¼ cup mild salsa
Set aside 4 tablespoons of black beans to use later.
Place beans, salsa, water, and tomato chunks in a large pot and mix. Mix in the cumin and sugar.
Place all ingredients in a blender in equal parts and puree until smooth.
Place back into a large pot and heat on medium until bubbling.
Serve hot and garnish with the remaining black beans.
