Black Bean Soup

Serve with baked tortilla chips for a delicious meal.

INGREDIENTS | YIELDS 4 servings

  • 1 15-ounce can black beans, rinsed and drained
  • 2 cups water
  • 1 cup chopped tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon sugar
  • ¼ cup mild salsa
  1. Set aside 4 tablespoons of black beans to use later.

  2. Place beans, salsa, water, and tomato chunks in a large pot and mix. Mix in the cumin and sugar.

  3. Place all ingredients in a blender in equal parts and puree until smooth.

  4. Place back into a large pot and heat on medium until bubbling.

  5. Serve hot and garnish with the remaining black beans.
