Conway Welsh Rarebit Melt
Using whole wheat English muffins saves calories. Broil the bacon to get the extra fat off.
INGREDIENTS | YIELDS 4 servings; serving size 1 melt
- ¼ cup unsalted butter
- ¼ cup flour
- ½ cup light beer
- ½ pound low-fat extra sharp cheddar cheese, grated
- 2–3 drops Tabasco sauce
- ½ teaspoon Worcestershire sauce
- 8 halves whole wheat English muffins
Melt butter in a saucepan over low heat. Add flour; whisk mixture until smooth.
Pour in beer and boil for 3 minutes, continuing to whisk.
Reduce heat; add cheddar cheese, Worcestershire sauce, and Tabasco sauce. Continue to cook until all ingredients are combined.
Pour mixture over toasted muffins and serve.
