Conway Welsh Rarebit Melt

Using whole wheat English muffins saves calories. Broil the bacon to get the extra fat off.

INGREDIENTS | YIELDS 4 servings; serving size 1 melt

  • ¼ cup unsalted butter
  • ¼ cup flour
  • ½ cup light beer
  • ½ pound low-fat extra sharp cheddar cheese, grated
  • 2–3 drops Tabasco sauce
  • ½ teaspoon Worcestershire sauce
  • 8 halves whole wheat English muffins
  1. Melt butter in a saucepan over low heat. Add flour; whisk mixture until smooth.

  2. Pour in beer and boil for 3 minutes, continuing to whisk.

  3. Reduce heat; add cheddar cheese, Worcestershire sauce, and Tabasco sauce. Continue to cook until all ingredients are combined.

  4. Pour mixture over toasted muffins and serve.
