Belgian Waffles

You can top these with any fruit you love, like strawberries or blueberries.

INGREDIENTS | YIELDS 6–8 servings

  • 2 cups buttermilk baking mix
  • 1 egg, beaten
  • 3 tablespoons vegetable oil
  • 1½ cups club soda
  1. Preheat waffle maker.

  2. Combine baking mix, egg, oil, and club soda in a medium bowl.

  3. Fill waffle maker according to baking mix directions. Bake until light and crispy.

Using Waffle Makers

Rub a little bit of the vegetable oil or nonstick cooking spray on the waffle maker to make sure your waffles come out light and fluffy, never dry. Some historians speculate that ancient Greeks ate primitive waffles, cooked between two hot slabs of metal. Medieval Europeans improved upon the technique and developed the trademark patterned plates we use today.
