Shrimp Scampi

Shrimp scampi is usually served with a melted butter mixture instead of vegetable oil. You can melt some butter or margarine instead of the oil, but be sure to factor in the calorie count of ¼ cup of melted butter.

INGREDIENTS | YIELDS 4 servings

  • light cooking spray
  • ¼ cup vegetable oil
  • 1 tablespoon lemon juice
  • 4 cloves garlic, crushed
  • ¼ cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1 pound cooked shrimp
  • 1 lemon, sliced or wedged
  1. Preheat oven to 350°F. Prepare a baking pan with light cooking spray.

  2. In a medium bowl, mix the vegetable oil, lemon juice, garlic, parsley, and salt.

  3. Add the shrimp to the mixture, tossing to coat.

  4. Evenly distribute shrimp in the baking pan. Drizzle the mixture over the shrimp.

  5. Bake for 5 minutes and turn shrimp. Bake another 5 minutes or until done.

  6. Garnish with lemon slices or wedges before serving.
