Salmon Loaf
This is a twist on traditional meatloaf and a delightful low-calorie, low-fat treat to serve your family with a side of green beans.
INGREDIENTS | YIELDS 8 servings
- 2 tablespoons olive oil
- ½ cup chopped shallots
- ½ cup light Ritz crackers, crushed
- ½ cup fat-free milk
- 1 egg, beaten
- 4 teaspoons lemon juice
- 1 14-ounce can salmon
- light cooking spray
Preheat oven to 350°F
Heat the olive oil in a skillet over medium heat. Sauté the shallots until tender.
In a large bowl, mix the shallots, cracker crumbs, milk, egg, and lemon juice. Beat well.
Add salmon to the bowl and mix well.
Lightly spray a baking pan. Place salmon mixture in the baking pan and bake for about 1 hour or until brown.
