Salmon Loaf

This is a twist on traditional meatloaf and a delightful low-calorie, low-fat treat to serve your family with a side of green beans.

INGREDIENTS | YIELDS 8 servings

  • 2 tablespoons olive oil
  • ½ cup chopped shallots
  • ½ cup light Ritz crackers, crushed
  • ½ cup fat-free milk
  • 1 egg, beaten
  • 4 teaspoons lemon juice
  • 1 14-ounce can salmon
  • light cooking spray
  1. Preheat oven to 350°F

  2. Heat the olive oil in a skillet over medium heat. Sauté the shallots until tender.

  3. In a large bowl, mix the shallots, cracker crumbs, milk, egg, and lemon juice. Beat well.

  4. Add salmon to the bowl and mix well.

  5. Lightly spray a baking pan. Place salmon mixture in the baking pan and bake for about 1 hour or until brown.
