Cuban-Style Braised Fish

Sprinkle pecans or almonds over the fish when it is done and serve with a side of vegetables.

INGREDIENTS | YIELDS 4 servings

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, diced
  • 4 tomatoes, diced
  • 3 jalapeños, diced
  • ¾ cup low-sodium chicken broth
  • ½ cup olives, thinly sliced
  • 1 pound halibut
  1. Heat the olive oil in a large deep skillet over medium heat.

  2. Add the onion and garlic and sauté for 5 minutes.

  3. Add the tomatoes, jalepeños, chicken broth, and olives. Let simmer.

  4. Add halibut and cook until fish flakes, about 10 minutes.
