Cuban Cuisine
Cuban cuisine has been influenced over centuries by Spanish, French, African, Arabic, Chinese, and Portuguese cultures. Most Cuban food is sautéed or slow-cooked over a low flame. Sofrito is a traditional seasoning; it consists of onion, green pepper, garlic, oregano, and ground pepper quick-fried in olive oil. Tomato-based sauces are also traditional in Cuban cooking.
