Gingerbread

Sprinkle this cake lightly with a little powdered sugar before serving.

INGREDIENTS | YIELDS 10 servings

  • ⅓ cup sugar
  • ¼ cup margarine
  • ½ cup molasses
  • 1 egg
  • 1½ cups flour
  • 1 teaspoon ground ginger
  • ½ teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon salt
  • ⅔ cup fat-free milk
  • light cooking spray
  1. In a large bowl, mix the sugar and margarine with an electric mixer until well blended.

  2. Add the molasses and egg. Mix well.

  3. Mix the flour, ginger, baking soda, nutmeg, cloves, and salt in a large bowl.

  4. Add the flour mixture to sugar mixture.

  5. Add the milk and mix well.

  6. Lightly spray a square baking pan.

  7. Pour batter into the pan.

  8. Bake for about 30 minutes or until done.
