Classic Oatmeal Cookies

Add a cup of raisins or ½ cup of pecans if you like.

INGREDIENTS | YIELDS 24 cookies

  • 1 cup sugar
  • ¼ cup margarine, softened
  • 2 eggs
  • ¾ cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 2 cups flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup uncooked oats
  • light cooking spray
  1. Preheat oven to 375°F.

  2. Prepare baking sheets with light cooking spray. Set aside.

  3. Beat the sugar and margarine in a large bowl with a hand mixer.

  4. Add the eggs, applesauce, and vanilla, mixing well.

  5. Combine flour, baking soda, and salt in a medium bowl.

  6. Add flour mixture to sugar mixture. Beat well.

  7. Stir in the oats and mix well.

  8. Drop dough into mounds on baking sheets, about 2 inches apart.

  9. Bake 15 minutes or until cookies are golden brown.
