Turkey Jambalaya

Substitute steamed mussels or clams for the turkey to get a seafood jambalaya.

INGREDIENTS | YIELDS 4 servings

  • 1 15-ounce can stewed tomatoes
  • 1 package dry vegetable soup mix
  • 1 teaspoon crushed red pepper
  • 1 cup low-fat ham, cut into thin strips
  • 2 cups cooked turkey, chopped
  • 2 cups cooked basmati rice
  1. In a large pan, combine stewed tomatoes, soup mix, and red pepper in two cups of water.

  2. Bring to a boil, stirring well.

  3. Reduce heat. Cover and simmer for 15 minutes.

  4. Stir in turkey and ham. Simmer for 5 more minutes.

  5. Pour over hot cooked rice.

Jambalaya

Jambalaya is traditionally made by combining all ingredients in one pot and completed by adding rice. Generally, it's a very spicy dish, but you can regulate the heat in your own cooking by adding more or less crushed red pepper. You can also experiment with the vegetables in this dish depending on what you like and what's in season.
