Zucchini Loaf
You can replace the honey with Splenda and add more Splenda if the batter doesn't seem sweet enough.
INGREDIENTS | YIELDS 18 servings
- light cooking spray
- 3 cups flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1½ teaspoons salt
- 2½ teaspoons cinnamon
- 2 teaspoons nutmeg
- ½ cup fat-free milk
- 2 teaspoons whipped egg whites
- ½ cup applesauce
- ½ cup honey
- 2½ cups grated zucchini
Preheat oven to 350°F.
Spray two bread pans with light cooking spray and lightly flour them.
Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
Combine milk, egg whites, applesauce, honey, and zucchini in a separate large bowl.
Gradually mix the wet ingredients and the dry ingredients.
Pour batter into the pans and bake for 1 hour.
