Zucchini Loaf

You can replace the honey with Splenda and add more Splenda if the batter doesn't seem sweet enough.

INGREDIENTS | YIELDS 18 servings

  • light cooking spray
  • 3 cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons salt
  • 2½ teaspoons cinnamon
  • 2 teaspoons nutmeg
  • ½ cup fat-free milk
  • 2 teaspoons whipped egg whites
  • ½ cup applesauce
  • ½ cup honey
  • 2½ cups grated zucchini
  1. Preheat oven to 350°F.

  2. Spray two bread pans with light cooking spray and lightly flour them.

  3. Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.

  4. Combine milk, egg whites, applesauce, honey, and zucchini in a separate large bowl.

  5. Gradually mix the wet ingredients and the dry ingredients.

  6. Pour batter into the pans and bake for 1 hour.
