Oatmeal Cinnamon Raisin Bread
Once baked, you can brush each loaf again with butter and sprinkle with more cinnamon and sugar to taste.
INGREDIENTS | YIELDS 30 servings
- 1½ cups dry oats
- 1½ cups boiling water
- 4 tablespoons honey
- 1 tablespoon Splenda brown sugar blend
- 2 teaspoons salt
- 1 tablespoon instant yeast
- 2 eggs
- ½ cup raisins
- 4 cups unbleached white flour
- 3 tablespoons melted butter
- 1 cup Splenda sugar blend
- 2 tablespoons cinnamon
Cook oats in boiling water.
Turn the heat off and add the honey, Splenda brown sugar, and salt to the oatmeal while it's still hot.
Let cool, then pour the mixture into a large bowl and add the yeast, eggs, raisins, and flour.
Once mixture reaches a dough consistency, knead for 10 minutes.
Cover bowl and let it rise until dough doubles in size.
Remove dough from bowl and cut in half.
Mold each half into a rectangle, brush with melted butter, and sprinkle with the cinnamon and sugar mixture.
Tuck loaves in two lightly greased loaf pans. Allow loaves to rise until double in size.
Preheat oven to 375°F, then bake for 35 minutes.
Remove from pan and cool on racks. Brush with additional melted butter.
