Irish Soda Bread
This is a low-calorie version of traditional Irish soda bread, using fat-free milk instead of buttermilk.
INGREDIENTS | YIELDS 8 servings
- 1 cup self-rising flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon lemon juice
- 1 cup fat-free milk
Mix the dry ingredients in a medium bowl.
Mix the wet ingredients in a medium bowl.
Add the wet ingredients to the dry ingredients and mix until batter forms a doughy consistency.
Knead the dough on a lightly floured surface for approximately 4 minutes. Form into an 8″ round.
Cut the round into quarters.
Place each quarter on a lightly oiled frying pan.
Fry on medium heat, cooking each side about 4 minutes.
