Irish Soda Bread

This is a low-calorie version of traditional Irish soda bread, using fat-free milk instead of buttermilk.

INGREDIENTS | YIELDS 8 servings

  • 1 cup self-rising flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon lemon juice
  • 1 cup fat-free milk
  1. Mix the dry ingredients in a medium bowl.

  2. Mix the wet ingredients in a medium bowl.

  3. Add the wet ingredients to the dry ingredients and mix until batter forms a doughy consistency.

  4. Knead the dough on a lightly floured surface for approximately 4 minutes. Form into an 8″ round.

  5. Cut the round into quarters.

  6. Place each quarter on a lightly oiled frying pan.

  7. Fry on medium heat, cooking each side about 4 minutes.
