Beef and Vegetable Cheese Casserole

If you want to add noodles, try mixing in 1 cup of whole wheat pasta or noodles.

INGREDIENTS | YIELDS 4 servings

  • 2 tablespoons canola oil
  • 1 medium onion, chopped
  • 1 pound lean ground beef
  • 1 9-ounce bag frozen mixed vegetables
  • ½ cup nonfat sour cream
  • 8 ounces 2 percent shredded low-fat cheddar cheese
  1. Heat oil in a skillet. Brown the onions.

  2. Add ground beef.

  3. While beef cooks, microwave mixed vegetables until thawed.

  4. Drain fat from fully browned beef.

  5. Add vegetables and nonfat sour cream to the skillet. Mix well.

  6. Pour into a casserole dish and sprinkle with low-fat cheddar cheese.
