Grilled Herbed Tomatoes

This is a super-fast, super-yummy snack or appetizer and is especially great during the summer months when you want something light and quick.

INGREDIENTS | YIELDS 4 servings

  • 4 large tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon olive oil
  • 2 teaspoons minced garlic
  • ⅓ cup balsamic vinegar
  • coarse salt and pepper to taste
  1. Cut tomatoes into slices ½" thick.

  2. Mix Italian seasoning, olive oil, garlic, and vinegar in large bowl.

  3. Marinate tomatoes in mixture for at least 1 hour.

  4. Preheat the broiler. Arrange tomato slices on baking sheet and place under broiler. Broil until tops are slightly crisp or warmed through. Flip over and broil underside of tomatoes.

Fruit or Vegetable

The tomato is traditionally thought of as a vegetable, but in fact it is a fruit. Tomatoes are indigenous to the Americas and were not introduced to Europe until the sixteenth century. The British feared the fruit might be poisonous and it did not become popular there until the mid-eighteenth century.
