Sweet Strawberry Soup
A very refreshing cold soup—substitute low-fat yogurt for sour cream for a higher protein dish; if the white wine doesn’t appeal to you, consider light cranberry juice.
INGREDIENTS | SERVES 6
- 1 pint strawberries, fresh or frozen
- 1 cup low-fat sour cream
- 1 cup low-fat milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons white wine
Process berries in blender or food processor until puréed.
Add sour cream, milk, sugar, vanilla, and white wine, and pulse until well blended.
Chill before serving.
