Perfect Holiday Prima Pasta
Why not serve pasta as a starch for a change? This is a light and healthy pasta—substitute any of the children’s favorite vegetables.
INGREDIENTS | SERVES 6–8
- 1 (12-ounce) box whole wheat tortellini or rotini noodles
- 1 pound broccoli rabe, chopped
- 2 tablespoons olive oil
- 1 medium onion, chopped finely
- 2 to 3 cloves garlic, chopped finely
- 2 cups jarred marinara sauce
- 1/4 to 1/2 cup Romano cheese, grated
- 1/4 to 1/2 cup Parmesan cheese, grated

In a large saucepan, boil water and cook pasta according to package directions.

In the final 3 minutes of cooking the pasta, put the broccoli rabe in the boiling water.

In a large skillet, heat olive oil on low heat. Sauté onion and garlic until softened.

Add pasta and broccoli rabe to the skillet, tossing constantly.

Add in marinara sauce, and cook an additional 2 to 3 minutes, until sauce is hot. Prior to serving, sprinkle with cheeses.
