Holiday Tiramisu

A healthier version of a wonderful and popular dessert. It is light and fluffy—and even better the next day!

INGREDIENTS | SERVES 8–10

  • 1 1/2 cups cold low-fat milk
  • 1 (8-ounce) package low-fat cream cheese, softened
  • 2 to 3 tablespoons instant decaffeinated coffee, prepared
  • 1 (4-ounce) package fat-free, sugar-free vanilla pudding
  • 2 cups low-fat whipped topping
  • 24 Lady Fingers, split
  • 1/2 cup hot water
  • 4 teaspoons instant coffee
  • 1/2 teaspoon unsweetened cocoa
  1. Place 1/2 cup of the milk and cream cheese in a blender or food processor with a steel blade. Process until well blended.

  2. Gradually add remaining 1 cup of milk and the prepared decaf coffee.

  3. Blend in pudding mix and fold in the whipped topping.

  4. Line the bottom and sides of a 9-inch pie plate with 24 to 36 Lady Finger halves.

  5. Mix water and instant coffee. Brush coffee mixture on Lady Fingers.

  6. Spoon half the pudding mixture over the Lady Fingers. Top with remaining Lady Fingers; brush with remaining coffee mixture. Again, top with remaining pudding mixture and cover.

  7. Refrigerate for a minimum of 4 hours, or overnight. Dust the top with cocoa before serving.
