Delectable Rice Pudding Casserole
Be adventurous (and healthful) and try using half white rice and half brown rice.
INGREDIENTS | SERVES 6
1/2 cup white rice
3 eggs, well beaten
4 cups low-fat milk
1 teaspoon vanilla extract
3 tablespoons trans-fat-free margarine
1/3 cup sugar
1/4 teaspoon salt
Nonstick cooking spray
Pinch of nutmeg

1. Preheat oven to 350°F.

2. Cook rice according to package directions.

3. In a medium mixing bowl, combine cooked rice and eggs, milk, vanilla, margarine, sugar, and salt.

4. In a casserole dish, spray nonstick cooking spray. Pour rice pudding into casserole dish. Sprinkle lightly with nutmeg.

5. Bake for 1 to 1 1/2 hours.
