Cherry Christmas Cake

A festive holiday favorite—it can become a blueberry, cranberry, or strawberry Christmas cake, too.

INGREDIENTS | SERVES 15–20

Cake:

  • 1 cup sugar
  • 2 eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/3 cup orange juice
  • Nonstick cooking spray
  • 1 large (15-ounce) can cherry pie filling

Streusel topping:

  • 1/3 cup sugar
  • 2 teaspoons cinnamon
  • 1/2 cup chopped walnuts (optional)
  1. Preheat oven to 350°F.

  2. In a large mixing bowl, beat sugar and eggs until pale in color, about 1 to 2 minutes.

  3. Add oil and vanilla and mix well.

  4. In a separate bowl, combine flour and baking powder.

  5. Add the flour mixture to the eggs and sugar.

  6. Slowly add orange juice. Continue to beat until batter is smooth and thick.

  7. Prepare streusel topping by blending sugar, cinnamon, and walnuts.

  8. In a 13" × 9" glass dish, spray nonstick cooking spray. Pour half the batter into the baking dish.

  9. Top with cherry pie filling; sprinkle with some streusel.

  10. Spread remainder of batter on top. Sprinkle remaining streusel topping on top.

  11. Bake 40 minutes or until toothpick comes out clean.
