Garlic Baked Fries

For garlic lovers only—and remember, don’t peel off the potato skin; that’s one of the healthiest parts.

INGREDIENTS | SERVES 6–8

  • 3 pounds baking potatoes, cut into 1/4-inch-thick strips
  • 2 tablespoons canola oil
  • 1 teaspoon salt
  • 3 tablespoons minced garlic
  • Nonstick cooking spray
  • 2 tablespoons finely chopped fresh parsley
  • 4 tablespoons Parmesan cheese, grated
  • 2 tablespoons paprika
  1. Preheat oven to 400°F.

  2. Combine potatoes, oil, salt, and garlic in a large plastic bag, tossing to coat.

  3. Spray baking sheets with nonstick cooking spray. Organize potatoes in a single layer on the baking sheets. Sprinkle with parsley, Parmesan cheese, and paprika.

  4. Bake for 30 minutes or until potatoes are tender and golden brown, turning after 20 minutes.
